Fresh tomatoes and fresh mozzarella tossed in a simple dressing of light olive oil, red wine vinegar, pressed garlic and a few cracks of pepper. This tomato and mozzarella salad is delicious. It can be served as an appetizer, a side or I like to pile it on top of some grilled chicken or even some pasta. The creamy mozzarella blends perfectly with the tomatoes and light garlic dressing.
