Did you know that ice cream could be made with just two ingredients? I had no idea it could be that simple and so refreshing and healthy, too! I added a small amount of sweetener to this recipe by adding honey – sugar or stevia would work, too. Sometimes raspberries can be a bit on the tart side.
This is a versatile recipe – choose any type of frozen fruit and blend with heavy whipping cream. It’s that simple I’m thinking peaches would be really delicious, too. This is a healthy homemade alternative to ice cream. Eat right away if you desire or freeze for at least two hours and serve chilled. A wonderfully delicious snack as we look forward to summer right around the corner 🙂
{2-Ingredient} Raspberry Ice Cream
Ingredients
- 2/3 c. heavy whipping cream
- 10 oz. frozen fruit I used raspberries
- sweetener 2-3 T. honey, optional
Instructions
- Place frozen berries and sweetener together in a food processor or blender. Process or pulse until the fruit is roughly chopped.
- Pour in the heavy cream and continue to process until everything is incorporated and smooth. Scrape down the sides as needed with a spatula.
- Serve immediately or freeze later.
