I enjoy a good salad, but these days with three young kids it seems like putting together a nice salad is low on the list. With young kids, I tend to be a made-to-order chef so making an extra salad for myself is not a priority.
However, there are times when it’s worth the extra effort…and this salad is one of them that is totally worth all the effort. All the different layers of this salad combine together well and are simply delicious. The 7 different layers of this Cobb salad are lettuce, tomato, red onion, corn, egg, bacon and cheese. You could easily add in some chopped chicken, diced ham or sliced avocado to add more protein and make it a main dish.
This layered Cobb salad looks beautiful when in a nice glass bowl and would be a great dish to take to a bbq or gathering. When ready to serve you can toss it all together with a homemade ranch dressing and voila, you have colorful and delicious salad.
- 2-3 heads romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- ½ red onion, diced
- 1 (15 oz) can corn, drained
- 10 hard boiled eggs, peeled and diced
- 10 pieces bacon, cooked and crumbled
- 1-2 cups shredded cheddar cheese
- In a large glass bowl or large trifle bowl, placed chopped romaine lettuce in the bottom
- Layer remaining ingredients on top, finishing the top layer with the cheddar cheese
- serve with your favorite salad dressing (homemade ranch is a great match)
