Mr. Farmer just pulled in and popped his head in the door. “How long til lunch?”, he asked. My reply, “Uhhhhhhhhhh, 8 minutes?” , I responded, not having a clue what I was going to set on the table before him. “Great, he said, as I have to meet Joe in about 20 minutes.”
This is when you rely on the PANTRY, BIG TIME! Since we are beef producers, I almost always have some ground beef in the freezer. These items to the left I always try to have on hand.
- 1-2 lbs. of ground beef
- ½ C chopped onion
- 2 teaspoons chili powder
- S & P to taste
- 1 can of chopped tomatoes with green chilies
- 1 can of chili beans or black beans
- 1 large can of tomato juice or 2 quarts home canned tomato juice
- 1 pinch sugar
- In a big kettle:
- Turn burner to High and brown 1-2 lbs of ground beef. (If frozen I will stick the package of hamburger in the microwave and hit "high" for about 2 minutes.)
- Brown ½ C chopped onion with it.
- S & P to taste
- Add ¼ C water to scrape all the browning off the bottom of the pot.
- Add 1-2 t of chili powder, or 3 or 4
- Add:
- can of chili beans or black beans. (Personally, I think any kind of beans would probably work. 🙂 )
- can of chopped tomatoes with green chilies
- large can of tomato juice or 2 quarts of home canned, which I always used to have on my basement shelf...........:(..............I'm lazy now.
- pinch of sugar.....maybe 1 t. (Shhhhhh....this is the secret indredient)
- Bring almost to a boil.....then turn to low and serve it up!
