Ambrosia Salad
Thanksgiving Day is just around the corner. This is another side salad that is simple and easy, but also refreshing and light. This fluffy fruit salad has always been a tradition for us over the years. After some tweaking, we now add coconut (which my husband loves), and throw in a few maraschino cherries to give it extra flavor and color. Enjoy! Kids love it, and adults do, too. We enjoy this often for Thanksgiving, Christmas, and Easter.
Ambrosia Salad

Ingredients
- 20 oz. fresh or canned fruit (pineapple chunks, mandarin oranges, several maraschino
- cherries; drained)
- 3½ c. whipped topping or Cool Whip; half can be substituted with sour cream or Greek yogurt
- 1 c. shredded coconut
- 1 c. mini marshmallows
Instructions
- In a large bowl, combine mixed fruit with marshmallows and coconut.
- Add whipped cream and toss to mix. Cover and chill several hours before serving.
