There is finally a lull in the rainy, windy weather…I am choosing to ignore the 10 day forecast calling for more rain and focus on these few beautiful, warm days we have now. Once May arrives and the weather warms up, I can’t help but pull out all of those delicious BBQ and picnic recipes that have been tucked away all winter. This Amish Salad is a recipe of my Mom’s and once again, it is super simple to make and extra tasty. The first time she made this recipe I was hesitant…I must admit, I am not a huge cauliflower fan, but my Mom rarely makes a dish I don’t like so I gave it a try. My brother-in-law must have been a little hesitant too as when we both went back seconds we were raving about how great it was. As I was scooping out another helping, I said to him “This creamy sauce must have mayonnaise in it, it’s so good I can’t get enough” (I have a deep love for mayo. haha). Then he replied “I think it must have a little sugar in it, it’s my weakness”. Well, wouldn’t you know, we were both right! 🙂
To make this simple salad you just chop up a head of broccoli and head of cauliflower, crumble some cooked bacon and throw in some cheddar cheese. Mix up the three ingredient dressing (Mayo, sour cream and sugar) and VOILA…you have a quick, tasty vegetable side dish. Perfect for your next BBQ or Picnic.

- 1 head of broccoli, chopped
- 1 head of cauliflower, chopped
- ½ lb bacon baked and crumbled
- 1 cup shredded cheddar cheese
- Dressing:
- 1 cup mayonnaise
- 1 cup sour cream
- ½ cup sugar
- Place broccoli, cauliflower, bacon and cheese into a large bowl.
- Mix dressing ingredients together and pour into large bowl.
- Stir to coat and enjoy!
