What three things come to mind when you think of Fall? For me, it is: Harvest, Pumpkins and Apples! Lots and lots of delicious apples, maybe even a fun trip to an orchard. My husband is not a fan of pumpkin food…it stems back to kindergarten when his teacher made him eat a sugar-free pumpkin bar. Ha! Since then, he has swore off anything pumpkin. So, for me instead of a house bursting with the smell of pumpkin during the fall months, we have the scent of apples and cinnamon, which I will gladly take. This apple cake recipe is my sister’s. She and her husband are extraordinary hosts, and this is on their hosting menu during the Fall months, so you can imagine how delicious it is!
A moist apple cinnamon inside with a crispy, sugary crumble topping. Top it with some homemade whipped cream or vanilla ice cream and it is a PERFECT Fall dessert….or even breakfast if you live under our roof. Hope you enjoy this recipe as much as we do!
- 2 cups sugar
- 2 eggs
- 1 cup oil
- 1 tsp vanilla
- 4 cups of apples finely diced (peeled or unpeeled, your choice)
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- topping
- 4 Tbs melted butter
- 2 cups brown sugar
- 1-2 cups nuts, chopped (optional)
- Preheat Oven to 350 degrees
- Combine and mix first four ingredients (sugar, eggs, oil and vanilla), stir in diced apples
- In a separate bowl mix flour, salt, baking soda and cinnamon and add to wet apple mixture, mix until well combined and all ingredients moist.
- Pour cake mix into a greased 9x13 pan
- Prepare crumble topping by mixing all together and spreading evenly on top of cake mixture.
- Bake at 350 degrees for approximately 1 hour.
- Sere with whipping cream or vanilla ice cream
