Today I am sharing another family recipe. This Apple Nut Coffee Cake is one that my Grandma Esther (or GiGi as my kids called her…short for Great Grandma) use to make. Not until I was going through her old recipe box this Summer, did I realize that it was actually her Grandpa’s recipe. So if I am correct (I have three young children and very sleep deprived these days, I could be wrong) this recipe would be that of my Great-Great Grandfather. Whoa, how cool is that? A quick flip through my family genealogy and it says that my Great-Great Grandpa James was born in 1873…so this recipe could easily be from the late 1800’s or even later if he got it from someone. It has definitely survived the test of time! It’s a great coffee cake for these autumn months ahead. Enjoy!
- 1 cup sugar
- ½ cup brown sugar
- ½ cup shortening
- 2 eggs
- 3 cup flour
- 1 tsp soda
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 cup milk
- 1½ cup chopped apples
- Topping: (combine)
- 3 T Sugar
- 1 cup nuts, chopped
- Preheat over to 350 degrees
- Cream together sugar, brown sugar and shortening.
- Beat in 2 eggs
- In separate bowl, sift flour, baking soda, salt, baking powder and cinnamon together.
- Alternately add dry flour mix to sugar mixture with 1 cup of milk until well blended.
- Fold in 1½ cup chopped apples.
- Pour batter into a greased 9"x13" pan
- Sprinkle combined topping on top and bake at 350 degrees for apprx 45 minutes
