Have you ever gotten the gift of fruit from Harry and David at Christmas time? It’s just so special to open up the box and peer into the wrapped assorted fruit, always one having some sort of golden foil or bright red wrapping.
Surprises
One year, tucked away in the box was this delightful recipe of fresh fruit and nuts with a simply delicious dressing. I tried it the other day because I just happened to have all the ingredients on hand in my pantry.
Jesus
It’s funny, I always think about Jesus when I open a package of dates or figs. Someone said once that Middle eastern kids ate these like candy. It stuck. So…..I always think about my Savior and His youth when I see dates and figs.
Jackers
Jack was here today. He played hide and seek in the house with Jenny. His selected fruit of the day were pineapple and Cutie tangerines. He laughed and chewed with his mouth open as he giggled and talked. It was such a joy to be around him. I’ll bet Jesus acted the same as Jack when he was stuffing another date or fig into his mouth. What a delight He must of been. It’s hard to imagine our Savior, Jesus, playing around without a care, at the age of 5. I cannot wait to meet Him. Maybe He will offer me a date……….
Salad
Back to the salad….
This salad really cannot get any easier. Mr. Farmer loved it and so did Jen.
Make it Special
Sometimes I like to use the “good dishes”, do you? It just makes dinner a little more enjoyable….a little more special.
So….when you make this salad, think about our dear Savior when you chew on the tasty dates. Maybe you could get out a special bowl and shiny serving spoon. Throw on a tablecloth and light a candle. Dinner will perhaps be the bright spot of your entire day. I hope.
Apple Pear Date Salad (found in the Harry & David box)
Ingredients
- 2 Apples diced
- 2 Pears diced
- 1 C dates quartered or chopped
- 1 C celery chopped
- 1/2 C English walnuts chopped
- 1/2 C mayonnaise
- 2 T honey
- 1 T lemon juice
- 2 t grated lemon peel
- Dash of salt
Instructions
- In a large bowl, place fruits, nuts and celery and give a stir.
- Dressing: Combine may, honey, lemon juice and peel, and salt and whisk. Pour over contents in bowl and combine well. Refrigerate until serving time.
