Do you listen to podcasts? My daughter, Annie, introduced me to “At Home with Sally” by Sally Clarkson. I feel like I’ve been instantly transported from our rural Iowa countryside to Oxford, England, whenever I tune in. Sally  is helping her daughter finish her schooling by caring for her granddaughter a few hours a week. She has taught me so much much about living as a godly woman, making my home a haven; great reads, tips for mothering and grand-mothering………..and so much more.

And….if you live in England, you stop every afternoon and have a cup of tea, relax, refresh and enjoy a little “me” time or “we” time, if possible. Listening to Sally’s free podcast while walking on the treadmill certainly makes the time fly. I also love to listen when I’m traveling. She really makes my day better.

Scones:

Sally’s daughter sweetly interrupted the podcast taping the other day by bringing a yummy scone to her mom. Of course Sally put on the tea kettle and I felt as though I was part of the tea party. So when I saw this recipe for scones, the ingredients came flying out of the cabinets and onto the counter. This recipe was easy and delicious—–and very moist!

 

Brown sugar was sprinkled on these rounds.

Apple Scones with Maple Frosting

Apple Scones with Maple Frosting

Easy and delicious. Makes one feel quite British. 🙂 I serve them with a cup of tea or coffee.
Ingredients
  • 2 C flour
  • ⅓ C sugar
  • 2 t baking powder
  • ½ t baking soda
  • 1 t cinnamon
  • ¼ C butter, cold
  • 1 C shredded Granny Smith apple (preferably)
  • ½ C milk
  • 1 T sugar
  • Frosting:
  • 2 T butter, melted
  • 1 C powdered sugar
  • pour in just enough milk to frost
  • 1 t maple flavoring
Instructions
  1. Preheat oven to 425 degrees
  2. Combine all dry ingredients in large bowl and stir together.
  3. Cut in the butter. Shred the apple and stir in, along with milk and stir. Add enough flour so that the dough is workable.
  4. Turn out onto flat surface and knead for a minute or two. Work more flour in if needed. . Divide dough into two balls
  5. Flatten until each circle is about 6 inches in diameter. Score lines atop if desired.
  6. Place on greased baking sheet. Sprinkle with sugar or brown sugar. Bake for 15 minutes until golden brown. Remove. Frost when warm and serve
