I wouldn’t particularly say my new year has started out with healthy eating. 😬 It’s been a whirlwind few weeks that’s included a lot of slow cooker meals and pizza. I swung into the grocery store earlier this week and the fresh ingredients were calling my name. I already had apples, walnuts and cranberries (for these cranberry orange muffins) on hand so I picked up a few other ingredients to mix up this Apple Spinach Salad. I’ve enjoyed this salad or a variation of this salad for several years. A student at my old wellness job shared the recipe.
Its a perfect mix of sweet and crunchy with a tangy homemade vinaigrette. Put all the ingredients in a bowl, drizzle vinaigrette over the top, gently toss and serve.

Apple Spinach Salad
Ingredients
- 10 oz baby spinach
- 2 apples cored and sliced thin
- 1/2 small red onion peeled and sliced thin
- 1 cup walnut halves toasted can subsitute pecans
- 2/3 cup dried cranberries
- 5 oz feta cheese crumbled
- Vinaigrette Dressing:
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 2 Tbs lemon juice
- 1 Tbs dijon mustard
- 1 large garlic clove peeled and minced
- pinch of salt and pepper
Instructions
- Add spinach, apples, red onion, walnuts, dried cranberries and 1/2 of feta cheese to a large bowl.
- Drizzle with vinaigrette dressing and lightly toss to combine.
- Serve immediately and sprinkle remining feta cheese on top.
