Avocado, Egg, & Toast

I love fresh avocados, and I am always looking for a reason to use them in my meals.  Other benefits of avocados are their “good fat” including several rich vitamins – making them equally filling for consumption.

Many breakfasts that I have regularly are just grains.  Typically they don’t last me more than a couple hours before I need a mid-morning snack. This breakfast sticks with me for most all of the morning. It is simple and easy. I especially enjoy the combination of eggs and a fresh vegetable.  If you need a little extra kick – add a dash of Tabasco sauce or Sriracha.

Ingredients
  • 1 slice of toast
  • 2 eggs
  • 1 T. milk
  • ½ avocado, sliced
  • salt and pepper to taste
  • shaved Parmesan
  • dash Tabasco or Sriracha sauce
Instructions
  1. Whisk eggs in small bowl with milk. Add salt and pepper if desired.
  2. Cook egg mixture in a skillet over medium heat. Gently stir until cooked - about 5 minutes.
  3. Spoon eggs onto toast. Top with avocado, Parmesan, and Tabasco sauce
