Avocado Feta Dip

I always love a new appetizer recipe and especially  one that goes with chips.  Appetizers and chips are my weakness combine them together and I have very little discipline in consumption.  ha!

I came across this recipe a long time ago on Pinterest and thought it was an interesting combination.   I enjoy tomatoes, avocados and feta cheese but have never tried them together.  I think of avocados and tomatoes as more of a Mexican dish and feta being associated more with Greek dishes.   With Cinco De Mayo just around the corner, I thought it would be a fun recipe to try.   Turns out this recipe is delicious, a combination of ingredients that blend well together.    Be sure to give it a try!

Avocado Feta Dip

Ingredients

  • 3 large avocados chopped into small pieces
  • 1 pint cherry tomatoes chopped into small pieces
  • 4 oz plain crumbled feta cheese
  • 1/2 small bunch of fresh parsley chopped fine
  • 1 Tbs olive oil
  • 1.5 Tbs red wine vinegar
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • tortilla chips for serving

Instructions

  • Except for the avocados, combine all ingredients in a small bowl. Cover and refrigerate a few hours up to overnight to allow flavors to blend.
  • Just before serving, chop avocados and gently stir in.
  • Serve with tortilla chips and enjoy!
