Still enjoying the fresh tomatoes this season? I’ve got another delicious and fun recipe for you to use! Bacon Tomato Tea Sandwiches! This recipe comes from some family friends or ours. The first time I tried these tasty little sandwiches was at my sister’s bridal shower. Yum! The perfect mix of bacon, tomato and mayo…yes, I still love mayonnaise. ha!
These little sandwiches work well as an appetizer or at tea time. A fun little snack at a bridal or baby shower too. They put together easily and are always a crowd favorite. The sandwich begins with some good white bread, you have a few options for this. You can choose your favorite store bought bread and cut it down to size with a cookie cutter or round glass or my favorite is to buy a frozen bread loaf (such as rhoades) and stick it into a bread tube and bake and slice. Fresh, delicious and fun shapes.
Mix together the bacon mayonnaise topping and spread onto the sliced bread and top with a tomato. Top with some fresh cracked pepper if desired and you are ready to serve.
- 18 small tea sandwich size slices of good white bread of choice
- 4 Roma Tomatoes, sliced
- Sandwich spread
- ¼ cup mayonnaise
- ¼ cup sour cream
- 2 Tbs crumbled bacon
- ½ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp salt
- Cut white bread into tea size sandwiches.
- Spread Bacon-Mayo topping on each slice
- Top with a sliced tomato
- If desired, sprinkle fresh cracked pepper over top
- Enjoy!
