If you have been reading The Gingham Apron for long, you know how much we all love pizza. We make it in a a lot of different ways including my Hearty Breakfast Pizza, Mom’s (Denise’s) Veggie Pizza, and Molly’s Mini Fruit Pizza. And then of course there is Shelby’s Pizza Rolls, De’s Beef Pizza, and let’s not forget my Simple Dessert Pizza.
Well, today I have yet another pizza recipe for you, and it’s one that we make quite often around my house, especially in the summer. It’s a little different, but I think you’ll love it. It’s BBQ Chicken Pizza with Cilantro.
This is probably the easiest pizza that I make because I unusually use some leftover grilled chicken and some bottled BBQ sauce, so it comes together REALLY quickly. (My 8 year old, Addison, did most of the assembly during this week’s Friday night pizza.)
Of course you could use a favorite homemade BBQ sauce or this Mango BBQ Sauce, which is a current favorite around here. But whichever BBQ sauce you use, I think you’ll LOVE it on this pizza.When baked at such a high heat, the sauce caramelizes and is just so wonderful.
But the REAL STAR of the show in this dish is the cilantro. It adds so much freshness, so much zing, so much interest…. so ….much (what am I looking for here….?) SUMMER ! This pizza, with the added bright cilantro just tastes like SUMMER.

- Pizza dough- enough for one 12 inch pizza
- 2 cups cooked chicken breasts, chopped
- ½ C bottled BBQ sauce
- ½ cup mozzarella cheese
- ½ cup Cheddar cheese
- ¼ C cilantro, chopped
- Preheat oven to 450 degrees.
- Roll our pizza dough and place on a greased cookie sheet.
- Spread BBQ sauce over dough.
- Place chicken on top of BBQ sauce.
- Cover with mozzerella and cheedar cheese.
- Bake for 10-12 minutes or until golden brown.
- Remove from oven and sprinkle chopped cilantro over pizza.
