Ok, so today’s new recipe, Blackened Chicken and Mango Skillet, is not going to win any awards for the world’s best looking recipe. In fact, its pretty ugly. And to make matters worse, I’m showing it to you in my very well loved, pretty-ugly-itself big skillet.
But, please look past appearances and listen: this recipe is SO DELICIOUS. It is savory and sweet and light and refreshing all at the same time.
And its a perfect weeknight meal for a busy family. I love skillet meals that come together in around twenty minutes. I made this last week on a Wednesday night when we needed something quick but nutritious before we headed off to AWANA and youth group. (Check out a couple of our other favorite skillet meals at the bottom of this post!)
I made a big pot of Perfect Mexican Rice to serve alongside the scrumptious chicken. It was a perfect match.
Blackened Mango Chicken Skillet
Ingredients
- 2.5 pounds thawed and drained chicken tenderloins
- salt black pepper, garlic powder, chili powder, and ground cumin for blackening
- 1 T butter
- 2 1/2 C frozen mango chunks or 2 T substitute no-sugar mango jello
- 2 1/2 C Seasoning Blend frozen diced onion and pepper
- 1 15 oz can black beans, drained
- Juice of 1/2 lime
- 1/4 t black pepper
- 1 1/2 t Super Sweet Blend or regular sugar, or sugar-substitute of your choice
- 1/4 t red pepper flakes optional
Instructions
- Lightly sprinkle the top sides of the chicken pieces with the salt, pepper, and garlic powder, then generously sprinkle with the chili powder and cumin to fully cover for a blackening effect.
- Heave a large skillet over medium-high heat and spray lightly with cooking spray; then add the butter. Once the skillet is hot and the butter has melted, add the chicken, blacken the tops by sprinkling on more seasonings as before. Turn the pieces once after about 5 minutes, and continue until the pieces are cooked through. Remove the chicken and set aside on a plate.
- If using the mango chunks,put them in a food processor and pulse until they are in small pieces but not broken down to a puree.
- Add the Seasoning Blend, beans, mango (or mango jelly), lime juice, and spices to the skillet and cook, stirring, for a few minutes.
- Return the chicken to the skillet and heat through with the other ingredients for another minute or two.
