Blueberry Fool

 

If you’re looking for a cool, refreshing dessert try out this Blueberry Fool.  I often think of this treat with Spring or early Summer.  It is light, creamy, and has a surprise of blueberries with lemon zest.  It is great on a warm summer night or upcoming special occasion!  

I have made it several times for Mother’s Day.  We’ve enjoyed it as a mid-afternoon delight, and if it’s nice enough, we’ve been able to take outside and sit on the patio or deck.  If you’re looking for a sweet, refreshing – yet simple dessert – this is great to enjoy with Mom!

Blueberry Fool

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1 c. fresh blueberries
  • 1/3 c. water
  • 4 T. sugar divided
  • 1 c. heavy cream
  • 1/2 t. pure vanilla extract clear
  • 1/4 t. grated lemon zest

Instructions

  • Combine the blueberries with 1/3 c. water in a saucepan over medium heat. Simmer until the berries are tender, about 10 minutes. Add 2 T. sugar and stir. Pour into a bowl, let cool, cover and chill for 1-2 hours.
  • With an electric mixer on medium speed (using whisk attachment), whip the cream in a large bowl with remaining 2 T. sugar and vanilla until soft peaks form when the whisk is lifted. Fold in blueberries and lemon zest gently with a spatula.
  • Divide the fruit mixture evenly among chilled glasses or bowls. Serve chilled briefly before serving.
