We are trying to adjust into our new routine. Back to school, alarm clocks and gearing up for harvest. I enjoy every day with my kiddos but once the school year gets going, I really savor a lazy Saturday when we can get one. A morning where we aren’t rushing around getting ready and watching the clock. A nice relaxing morning of sleeping in, hanging in our pajamas and making breakfast a little more luxurious than the typical cereal or oatmeal.
Don’t let my luxurious adjective scare you away from making this breakfast focaccia. It’s actually quite simple to make and full of flavor. Sausage, pineapple, onion and sage sprinkled with some mozzarella. A sunny combination to your morning! Be sure to give it a try the next time you are hoping to change up breakfast or even serving guests!
- ½ pound ground sausage
- 1 (13.8oz) tube of refrigerated pizza dough
- ¾ cup finely chopped onion
- 1 tsp dried sage leaves
- 2 tsp olive oil
- ¼ tsp ground black pepper
- 1 (8oz) can pineapple tidbits, drained
- 1 cup shredded mozzarella
- Preheat oven to 425 degrees
- Brown sausage, drain excess grease and set aside.
- Unroll dough into a 14x10 greased cookie sheet pressing dough down and slightly up sides.
- In a small nonstick skillet cook onion in oil over medium heat apprx 3-5 minutes until tender and beginning to brown.
- Stir in sage and pepper.
- Spread onion mixture over dough.
- Arrange sausage over dough and bake for apprx 8 minutes.
- sprinkle with cheese and back 5-6 more minutes until cheese melts and crust in golden brown.
- Cut into rectangles and serve
