I am always looking for a good chicken casserole to try. What I love about this recipe is that it can be whipped together in about 30 minutes or less. It’s a total comfort meal that’s great for a simple week-night dinner. It doesn’t involve too much extra preparations and it has most all of the food groups to dish out – grain, dairy, vegetable, and poultry. Add a little fruit on the side and dinner is ready!
Broccoli Chicken Casserole
Ingredients
- 1 16 oz. pkg. egg noodles, cooked - be sure to add salt to water when cooking
- 1 lb. broccoli florets
- 2 c. chicken breast cooked and shredded
- 2 c. homemade white sauce butter, flour, milk
- 1/4 c. sour cream
- 1/2 c. milk or noodle water
- 1/2 t. onion powder
- 2 c. shredded cheddar cheese
Instructions
- In a large pot, cook the noodles according to the package directions.
- Cook broccoli.
- Drain noodle water, reserving 1/2 c. liquid to mix in casserole.
- Using a saucepan, prepare white sauce by heating 3 T. butter then whisk in 1/4 c. flour for about a minute. Gradually add 2 c. milk. Heat and stir until thickened and no longer lumpy.
- Add the chicken, broccoli, sauce, water or milk, sour cream, and onion powder to the large pot with noodles. Mix well until everything is coated. Pour into a 9 x 13 pan and sprinkle with cheeese on top. Put under the broiler until cheese is melted.
- Serve warm with bread.
