School is nearly out (in 4.5 days but who is counting? 😉), which means…Summer! As a parent I think I am looking forward to summer break just as much as my kids. Can’t wait to have them hone with me and no agenda or schedules to keep.
Along with summer time I tend to break out different recipes. Away goes the soups and crockpots and out come the grilling utensils and fun ice cream desserts and fresh pies.
This Brownie Cake Batter Ice Cream Cake is on the top of my list for the summer. It looks fancy but is fairly easy to make and the layered brownie, cake batter ice cream and fudge are perfect for summer time (or anytime actually). Be sure to give this a cake at your next gathering or even a birthday party. You will be glad you did.
- 18 oz box of brownie mix (or similar size) and ingredients listed on box.
- 8 oz cream cheese, softened
- ½ cup sugar
- ½ cup milk
- 1¾ cup dry funfetti cake mix
- 8 oz cool whip
- ½ cup and 4 Tbs hot fudge sauce
- 5 Tbs sprinkles
- Mix brownie batter according to instructions on back of box.
- Grease two 8 inch springform pans and line the bottoms with parchment paper. Bake at suggested temperature on box, reducing baking time to about 20 minutes
- When brownies are done baking, remove from oven and allow to cool
- Cake batter Ice Cream:
- Beat the cream cheese until smooth. Add in sugar, milk and dry cake mix until completely combined. (Will be think and sticky)
- Fold in cool whip and sprinkles.
- Assembly:
- Using an additional 8 spring form pan with parchment paper above the edge of the pan.
- Put the first brownie layer in the bottom of the pan.
- Spread ¼ cup hot fudge sauce on top of brownie
- Add ½ the ice cream and spread into an even layer
- Drizzle 2 Tbs hot fudge sauce over ice cream mixture and gently work into mixture for a swirl
- Add second brownie to pan
- Spread ¼ cup of hot fudge sauce on top of brownies.
- Top with remaining ice cream.
- Add reaming 2 Tbs hot fudge sauce and gently work into ice cream to create swirl
- Allow ice cream cake to freeze completely. Around 6-8 hours, covered
- When frozen, remove from springform pan and remove parchment paper from sides.
- Drizzle with additional hot fudge sauce, top with whip cream and sprinkles
