Healthy Buffalo Chicken Salad…what? Think of a chicken salad mix, buffalo style! Yum! I enjoy this mixture for a few reasons, the obvious…it’s delicious. Second, it’s versatile. Serve it plain, as a slider, a sandwich on whole grain toast with avocado and tomato or even as a lettuce wrap. Third, it’s so simple to throw together. I often chop up leftover chicken, add the other ingredients and it’s on the table in just a few minutes. This recipe hits the spot for me when I am craving chicken wings and of course, due to country living I don’t have access to them. It’s thick and creamy with your favorite flavors of ranch and buffalo sauce, without all the calories. Score!
Funny story about this recipe. My husband and I have been married for over seven years. I have a background in wellness so my husband has gotten use to my healthy recipes and substitutions. Very rarely can I slip one of these recipes by him. The first time I made this, he was commenting on how tasty it was and wondered if there was cream cheese in them. After I informed him they did not contain cream cheese but instead contained a low calorie, protein packed Greek yogurt, he responded “you got me on this recipe”, Awesome, a healthy recipe, even my suspecting husband couldn’t detect? That’s a win in my book!
- 2 cups chopped and cooked chicken
- ½ cup plain greek yogurt
- 1 Tbs light mayonnaise
- ½ - 1 Tbs hot sauce (depending on preference)
- 1.5 tsp dry ranch seasoning mix
- Fresh ground pepper (optional)
- In a medium bowl combine yogurt, light mayonnaise, hot sauce and ranch seasoning, stir in chicken
- Serve as desired!
