What is your favorite kind of salad? Caesar salad happens to be a hands-down favorite of mine. It is something I crave at least once a week and seems to pair great with Italian food or a lighter dinner like fish. My husband also loves it.
When we traveled this last winter to Clearwater Beach, Florida, I think between the two of us, we had a Caesar salad everyday. Often, it can make it’s own meal when topped with grilled chicken, salmon, or even fresh grouper. The crunchy lettuce, and creamy garlicky dressing topped with Parmesan is a flavor (and acquired taste) I won’t get tired of.
I am so glad we had the opportunity to getaway to the beach this past winter, especially now with the pandemic and how much our world has changed. I am more thankful for traveling. I always love the beach and I couldn’t wait for my kids to get to experience it as well. We had a wonderful trip, and can’t wait to go back!
Now, I’ve finally created my own version at home. I don’t use raw egg for this dressing – as some do. I also do not care for anchovies, so I leave those off – but please add them back in if desired.
Caesar Salad
Ingredients
- 1 head of romaine lettuce; washed chopped
- 1 c. crotons homemade or store-bought
- 1/3 c. Parmesan cheese grated
- For the dressing:
- 1/4 c. mayonnaise
- 1 clove of garlic minced
- 1 T. lemon juice
- 1 t. Worcestershire sauce
- 1 t. Dijon mustard
- 1/2 t. coarse salt
- 1/2 t. ground black pepper
Instructions
- For the dressing:
- Whisk together all ingredients.
- Store in the fridge until ready to use.
- In a large bowl, toss the lettuce with enough dressing to lightly coat the leaves.
- Add half of the croutons and Parmesan cheese and toss again. Top with remaining croutons and cheese. Serve immediately.

Molly’s great aunt and uncle once owned a restaurant named Caesars Head as it was located on the mountaintop of Caesars Head State Park, just north of Greenville, South Carolina. Molly comes by this love of the salad and the beach quite naturally! Blessed am I to savor this salad with all the goodies when I join them at their pastoral country home.
