Candied Nuts

These are easy, satisfying, and full of protein.  Make them in a big batch and then separate into zip lock bags for a quick, take-along snack.  IMG_4317

Ingredients
  • Candied Nuts
  • Servings: Approximately 12-15
  • 1 ¼ C water
  • 2 ½ C white sugar
  • 2 T and 1 ½ t of cinnamon
  • 3 C whole almonds
  • 2 C whole pecans
Instructions

  2. Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil, stirring constantly with wooden spoon. Lower the heat and add the almonds. Cook and stir the mixture until the liquid completely evaporates and leaves a crystal-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds. Allow nuts to cool, about 15 minutes package in airtight container as desired.
Notes
Option: Make with only almonds for a candied almond recipe.

Substitute stevia for sugar for sugar-free option.
