Spring and Easter are just around the corner! Can I get a collective “wohoo”! 😀 In our house we are sure looking forward to some warmer weather and sunshine. My kids actually have a countdown to the start of Spring. I have tried to warn them that just because the Spring season arrives doesn’t automatically mean that the weather is beautiful. They look at me puzzled and then just continue on talking about their outdoor plans.
One thing on my spring agenda is to pull out my spring recipes. Do you have seasonal recipes? One of the first recipes up is of course this Carrot Cake Trifle. It’s just your traditional carrot cake with cream cheese frosting turned into a trifle. It’s a fun and easy way to change it up. Top it with some Chocolate covered strawberries that look like carrots and it almost looks gourmet…or so I tell my unskilled cake decorating self. 😜 Get strawberry carrot recipe HERE.
- 1 box of carrot cake mix and required ingredients for cake mix.
- 1 carrot, shredded (optional)
- 8 oz softened cream cheese
- 1.5 sticks of softened butter
- 3.5 cups powdered sugar
- 1 Tbs vanilla
- 16 oz cool whip
- Bake cake mix as instructed on box in a 9x13" pan (mix in optional shredded carrot to mix if desired to make more authentic) allow to cool and break into small cubes.
- In a separate bowl using an electric mixer cream together cream cheese and butter until light and fluffy. Apprx 3-5 minutes, be sure to scrape the sides as mixing.
- Run mixer on low speed and mix in powdered sugar ½ cup at a time until combined well.
- Pour in Vanilla and continue to mix for an additional 3 minutes as it begins to fluff.
- With mixer still on low, slowly add in the cool whip a little ad a time until well combined.
- In a trifle bow or deep glass bowl, place one layer of carrot cake pieces/crumble. Then layer with whipped cream cheese frosting. Repeat ending with the whipped cream frosting on top.
- Top cake with desired topping (strawberry covered carrots, plain or even crushed pecans)
