The kids love the bright, fresh flavors, and I take a lot of joy in seeing my kids drink down veggies and fruits that are so good for them.
The combo of orange and carrots seem very natural to me, because my Grandma Maxine made this favorite Carrot Salad for EVERY family dinner, and I mean EVERY SINGLE ONE. Grandma’s are the best!
Are you familiar with that vintage salad? I find it refreshing and delicious, and now my daughter has come to love it, too. And this smoothie tastes just like that beloved delicious jello salad. If you’re thinking that the carrot/orange combo isn’t for you, just give it one little try, and you might be surprised!
This smoothie is about as easy as it gets. I don’t even peel the carrots because there is a lot of fiber and nutrients found in the peel. (Don’t be alarmed- I give them a good scrub and chop off the ends.) I also use frozen pineapple, which eliminates chopping, and is much more affordable than fresh. Either orange juice from the carton or fresh squeezed orange juice are perfect for this; just use whatever you’ve got on hand.
- 1 carrot, scrubbed and chopped
- 1 C pineapple chunks (frozen or fresh)
- 1 banana (optional)
- ½ C orange juice (fresh-squeezed or from the carton)
- 8-12 ice cubes (add more if you like smoothies really icy)
- 1 C water
- Throw everything into your blender and... blend!
