Quick, delicious, versatile and easy.
Ingredients
  • 4 oz crumbled blue cheese (Optional brie or Havarti)
  • 2 T unsalted butter
  • 2 T bandy (optional) or a favorite flavoring, your choice
  • ¼ C chopped walnuts (I use pecans, too)
  • 16¼ " thick toasted French bread slices or baguette slices
  • 1 medium ripe pear, cored and thinly sliced
Instructions
  1. In a small bowl let the blue cheese and butter stand at room temperature about 30 minutes. Mash with a fork until well combined. Stir in flavoring and chopped walnuts.
  2. Place bread on cookie sheet, broiling each side until toasted. Take out of oven and cool a minute.
  3. Top each slice of toast with a pear slice. Top each pear slice with 1 T of the blue cheese mixture.
  4. Place bread slices on a baking sheet. Broil about 2 minutes or until the cheese is melted and bubbly. Serve hot.
