School is in full swing here at our house and the dinner menus have switched to simple and fast. Enjoying our free time outside and relaxing after school instead of cooking in the kitchen are of priority these days. This Cheesy Chicken Rigatoni fits the demands. It’s full of flavor, simple to make (esp if you use leftover chicken) and appeals to all ages.
Cheesy Chicken Rigatoni
Ingredients
- 2 chicken breasts cooked and shredded
- 1/2 large block 2% Velveeta cheese
- 1 box Rigatoni cooked
- 1 can cream of chicken soup
- 1 can of Rotel
- 2 cups cheddar cheese
Instructions
- Cook pasta according to directions on the box, set aside.
- In a large pot, add in Velveeta cheese, cream of chicken soup and Rotel. Mix well and melt over medium low heat.
- Once melted and mixed, add in shredded chicken and pasta and mix well.
- Once combined top with shredded cheese and place the lid on until melted. Stir and Enjoy!
