If you’ve read The Gingham Apron for long, then you know how much my family loves Chick fil-A! Yep, that’s us!
We love everything about Chick fil-a: their legendary service, their generosity, and of course their food. While the chicken sandwiches are divine, our family has also come to love their tortilla soup. It’s creamy, hearty, flavorful, and super healthy.
So, I’m delighted to tell you that I’ve been making it at home, and it tastes just like the restaurant version. Something unusual about this soup that makes it SO healthy is that the broth is made by blending two cans of great northern beans. This makes the soup really creamy and comforting without adding lots of calories. Win, win!
I also love that this soup is made mostly from canned goods, so it is economical and easy to keep the ingredients on hand. Whip it up for your family soon! Serve it with some great tortilla chips or strips and a few lime wedges for a fun, fresh dish.
- 1 T canola oil
- 1 medium white onion, chopped
- 2 cloves garlic, minced
- 2 t cumin
- 2 t dried oregano
- 1 t salt
- 3 (15 oz) cans great northern beans, separated
- 2 (10 oz) cans diced tomatoes with green chilies (such as Rotel)
- 1 (15 oz) can cream of corn
- 1 (15 oz) can whole kernel corn
- 1 (15 oz) can black beans
- 4 C chicken breast meat, cooked and cubed
- juice of 1 lime
- Tortilla chips, for serving
- lime wedges, for serving (optional)
- Heat canola oil in a large pot over medium heat. Add chopped onion and minced garlic. Let saute for about 5 minutes until onions become translucent.
- Stir in cumin, oregano and salt.
- Meanwhile, puree 2 cans of cannellini beans in a blender until smooth. Do not drain beans of liquid before blending.
- Add pureed beans, remaining can of great northern beans, 2 cans Rotel, cream of corn, whole kernel corn, black beans, and chicken to onion mixture in pot. (Do not drain any cans of their liquid) Stir to combine.
- Let soup simmer over medium heat until heated all the way through.
- Add juice of 1 lime and season with salt to taste before serving. Serve with tortilla chips and the optional lime wedges.
