When I was younger I remember my grandma making this Artichoke Chicken Salad for a nice late afternoon lunch. There was no way at the time my 12 year old self was going to touch anything with artichokes or olives…so like any normal kid would do, I chose to eat cereal instead. Fast forward a decade (errr, or maybe two) and I am a huge fan of this chicken salad. I like the flavor the different ingredients bring to change up your traditional chicken salad. Sometimes I serve it on a croissant like a usual chicken salad, other times I serve it as a lettuce wrap and occasionally I even eat it plain. Either way I serve it these days, I enjoy it….it has just takes a few years for my taste buds to become more refined. haha! This would be a perfect sandwich for a spring or summer picnic or luncheon. - 2 cups diced cooked chicken
- 1 package Chicken flavored Ricearoni (prepared as on package omitting butter)
- 6 sliced green onions
- ¼ cup sliced stuffed green olives
- ½ cup chopped green peppers
- 12 oz marinated artichoke hearts
- ¼ tsp curry powder
- ⅓ cup mayonnaise
- Combine ricearoni, onions, green pepper, olives, marinade from artichokes, mayonnaise and curry.
- After mixed well, toss in artichokes and chicken
- Store covered until ready to serve.
- Serve on crossiant, lettuce leaf or plain
