I love the idea of anything on skewers. It’s summer and grilling season is at its peak. I am always looking for something new and fun to try on the grill. I was thrilled to see that our local Fareway grocery store now carries chicken skewers! Yes! We don’t have a lot of Thai food or restaurants in our area, so I decided this would be the perfect opportunity to do some grilling at home and make a Thai night out of it. It was so simple and good. We had this dish with rice, and a simple peanut sauce to dip or drizzle over the chicken. I hope you enjoy it, too!
Chicken Satay with Peanut Sauce
Ingredients
- 4 Chicken Skewers (cooked, or grilled)
- For the Satay Sauce:
- 3 T. smooth peanut butter
- 1 T. dark soy sauce
- 1/2 t. chili flakes red pepper; as desired
- 7 oz. coconut milk
- 1 T. light brown sugar
- 1/2 t. ground cilantro
- Garnish with:
- 2 T. freshly chopped cilantro
- 1/2 t. chili flakes
- 1/4 red onion thinly sliced
- 1 T. peanuts - roughly chopped
- 1 t. sesame seeds
- juice from 1 lime
Instructions
- While meat is cooking, place all of the satay sauce ingredients except the lime juice into a small pan. Heat over medium heat while stirring with a wooden spoon. Then, as it comes close to boiling, it will start to thicken. Don't let it boil, and turn down the heat. Once thickened, remove from heat, and add lime juice.
- Place cooked chicken skewers on a plate, then add the satay sauce either in a small bowl or drizzle on top of chicken. Garnish with cilantro, chili flakes, red onion, peanuts, and sesame seeds.
