Chicken Tetrazini
***This post was originally written several years ago, but this recipe remains a family favorite, and I wanted our new readers to get a chance to make this delightful pasta dish. ***
Our family attends a weekly Bible study in our neighborhood, and each evening we start off with a themed potluck. We’ve had Mexican night, Italian night, perfect pairs night (think mac n cheese, soup n salad, etc). Tonight’s theme is family favorites, and chicken tetrazini is definitely our family’s favorite pasta dish.
This creamy, garlicky, cheesy, and comforting pasta recipe is simply wonderful. The taste is similar to fettuccine Alfredo, but its a lot healthier! Instead of using heavy cream, I use lighter ingredients of (fat free) cream of chicken and skim milk. I also use whole wheat (or low glycemic) pasta and sometimes add shredded carrots and zucchini to add more nutrition. I love it because it’s an easy recipe the kids can help make.

And back to the weekly Bible study- our family looks forward to this night every week. It is so wonderful to gather together with a group of friends, enjoy a wonderful meal together, and then dig into God’s word. It is such a gift, and I encourage you to consider finding something similar through your church. The blessings we’ve received from our group are innumerable.

A great pasta dish is even better when paired with a terrific salad and warm bread, right? Try these favorites:
- 1 12 ounce box pasta
- 2 cooked and chopped chicken breasts
- 3 T butter
- ½ C shredded zucchini (optional)
- ½ C shredded carrots (optional)
- ¼ cup minced onion (optional)
- 2 T minced garlic
- 1 can (fat free) cream of chicken soup
- ½ C reduced fat sour cream
- ½ C skim milk
- ½ C reduced fat Parmesan cheese
- salt and pepper to taste
- dry parsley to garnish (optional)
- While the pasta is boiling, melt butter on low heat in a frying pan.
- Add garlic, onion, zucchini, and carrots. Saute for about 3 minutes.
- Add soup, sour cream, milk, cheese, and chicken. Stir over low heat until pasta is done boiling. Drain pasta and add to the mixture. Toss well and serve immediately.

please advise me on how much milk is added to the Apple Scone recipe. The amount of milk is mentioned for the frosting but I can’t see the measurement for the milk in the scone batter. Thank you
