A few weeks ago I was busy making preparations for some guests to come visit and join us for dinner. As with typical farm life, something came up last minute that took priority over my preparations. Out the window went my plan of a made from scratch layered chocolate cake (yum!). When I finally returned home to jump back into preparing for our guests, my time was obviously cut short. So instead of a made from scratch cake, I pulled out a boxed chocolate cake mix and while it was baking I whipped up some of this Chocolate Cream Cheese Frosting. The frosting added just enough rich flavor and a thick creamy texture that nobody realized that it was a cake mix from a box. I put the frosted cake on a platter and threw a few strawberries on the side and it was a after dinner dessert for adults and kiddos!
This recipe is easy to make and adds a delicious topping to your favorite cake or cupcakes (homemade or not). Does your mother love chocolate? Consider making this frosting to top a cake for Mother’s Day!
Chocolate Cream Cheese Frosting
Ingredients
- 1 1/2 cups butter softened
- 8 oz cream cheese softened
- 1 1/2 cups unsweetened cocoa powder
- 3 tsp vanilla extract
- 7-8 cups powdered sugar
- apprx. 1/4 cup milk as needed
Instructions
- In a large bowl, beat together (with a hand or stand mixer) butter and cream cheese until fluffy
- Add in cocoa powder and vanilla extract, Mix until combined
- Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting will be fairly thick and will thicken more upon refrigeration,
- Spread on your favorite cake and enjoy!
