It’s tomato season! Nothing like enjoying fresh tomatoes out of the garden…or in my case, from a friend’s garden. (I didn’t get a garden planted this year) 😉 BLT’s are a favorite to make this time of year with a side of sweet corn on the cob. Another favorite I enjoy this time of year is this Chopped BLT Salad with Avocado and Feta Cheese. It’s full of fresh ingredients, drizzled with a homemade balsamic dressing, and it is delicious!
- 1 head of green leaf lettuce, chopped
- ¾ cup of cherry tomatoes, halved
- 6 bacon slices, baked to desired tenderness (I like mine crispy) and chop into bite size pieces
- ½ cucumber, diced
- ½ cup of feta cheese, crumbled
- 1 avocado, diced
- Dressing:
- ¼ cup extra virgin olive oil
- ⅛ cup good balsamic vinegar
- ½ tsp lemon juice
- ½ tsp yellow mustard
- sprinkling of sea salt
- Chop all ingredients and add into a serving bowl and mix together.
- Combine dressing ingredients into small mason jar and mix together.
- Dish each individual serving of salad ingredients into a bowl or a plate and drizzle with dressing.
- Enjoy!
