Chopped BLT Salad with Avocado and Feta

It’s tomato season!   Nothing like enjoying fresh tomatoes out of the garden…or in my case, from a friend’s garden. (I didn’t get a garden planted this year) 😉   BLT’s are a favorite to make this time of year with a side of sweet corn on the cob.  Another favorite I enjoy this time of year is this Chopped BLT Salad with Avocado and Feta Cheese.  It’s full of fresh ingredients, drizzled with a homemade balsamic dressing, and it is delicious!Chopped BLT Salad


Chopped BLT Salad with Avocado and Feta

Ingredients
  • 1 head of green leaf lettuce, chopped
  • ¾ cup of cherry tomatoes, halved
  • 6 bacon slices, baked to desired tenderness (I like mine crispy) and chop into bite size pieces
  • ½ cucumber, diced
  • ½ cup of feta cheese, crumbled
  • 1 avocado, diced
  • Dressing:
  • ¼ cup extra virgin olive oil
  • ⅛ cup good balsamic vinegar
  • ½ tsp lemon juice
  • ½ tsp yellow mustard
  • sprinkling of sea salt
Instructions
  1. Chop all ingredients and add into a serving bowl and mix together.
  2. Combine dressing ingredients into small mason jar and mix together.
  3. Dish each individual serving of salad ingredients into a bowl or a plate and drizzle with dressing.
  4. Enjoy!
