We love all things cinnamon and sugar at my house. Possibly my youngest kiddos favorite dessert is a “Cheer-O” from “the warehouse”. Otherwise known as a churro from Costco. My little buddy and I have a pretty good system worked out. We walk into Costco through the exit doors, buy a “Cheer-O” and then he proceeds to settle in with his treat while I walk around and accomplish a little shopping. Look at that little guy below. 😉
I’m going to miss my shopping trips with him when he heads off to kindergarten this Fall. (insert tears) Ok, back to the recipe…if we love churros so much, it’s only natural that we would love a churro chex mix, I even added in some little caramel bits for a little something special. It’s loaded with cinnamon and sugar, easy to make and a great snack to take along on the go and a treat that is hard to just eat one handful. I really can’t think of any reason why you shouldn’t make this recipe. Haha. Check it out below!
Churro Chex Mix With Caramels
Ingredients
- 1 12 oz box of Rice Chex cereal
- 1 1/4 cup sugar
- 2 Tbs cinnamon
- 1 cup butter melted
- 1/4 cup packed brown sugar
- 1 Tbs vanilla extract
- 9-11 oz Kraft caramel bits
Instructions
- Preheat over 275 degrees. Line a large cookie sheet with parchment paper.
- In a small bowl, whisk together sugar and cinnamon. Set aside. Pour Chex in a large bowl
- In another bowl whisk together melted butter, brown sugar and vanilla. POur butter mixture over cereal and mix to coat
- Sprinkle cinnamon mixture over ceral and toss again to coat. Transfer to parchment lined pan and spread into an even layer
- Bake for 45 minutes, stirring every 15 minutes
- Remove from oven and let cool for apprx 15 minutes and then mix in the caramel bits.
- Once completely cooled store in an airtight container for up to one week
