Citrus Winter Salad

I hope you had a wonderful Christmas and have been able to enjoy this holiday season with friends and family! I am attempting to hold on to it, and make it last as long as possible as it is such a joyous time of year.  We spend so much time preparing for this holiday… I can’t let it go quite yet.

I am sharing with you one of our favorite family salads. I made it on Christmas Eve, and it is often one I think of every year during the winter months.  My mom made it for us every year that I can remember, and now it’s one I crave. 

The pomegranates just add those bursts of flavor mixed with the citrusy tart fruits.  The red onion, nuts, and feta cheese enhance this refreshing salad. I typically use Ken’s Steakhouse Raspberry Walnut Vinaigrette for the dressing; however Poppy seed dressing would also be another great option.

Ingredients

  • 20 oz fresh spinach about 2 bags, chopped or torn
  • 1 grapefruit peeled and chopped
  • 1/2 pomegranate
  • 1 clementine peeled and sectioned
  • 1/4 c. feta cheese
  • 1/4 c. pecans halved
  • 1/4 c. red onion chopped
  • Dressing options: Raspberry Walnut Vinaigrette Poppy seed dressing, or Champagne Vinaigrette

Instructions

  • Coarsely chop fresh spinach and place in large bowl. Combine with grapefruit, pomegranate, clementine, feta cheese, pecans, and red onion.
  • Mix together, then drizzle with dressing (I use Raspberry Walnut Vinaigrette).
