Coconut Carribean Smoothie
Often in January, everyone is ready to get back on track with healthy eating again. I always feel like smoothies are a great way to get healthy fruits and vegetables. They are great any time of the day, as my kids will tell you
We recently posted Our Best Healthy Smoothie Recipes, and it got me back in the Smoothie kick again. I especially love them this time of year, when I can pretend I am close to the beach enjoying my tropical smoothie. Haha! They are so refreshing and motivating. And I love fruit.
It wasn’t until I met my husband, that I discovered the riches of coconut, and who has now made me a coconut fan, too. He loooooves coconut. As a kid he would sneak into his mother’s Tupperware bin hidden in the lazy susan and grab heaping handfuls of coconut…So far, I haven’t caught him yet at our house But now, I would have to agree that it enhances the flavor when paired with fruits, or chocolate, or ice cream – you name it.
By happenstance, I tried adding shredded coconut to our smoothie drink, and it was a hit! Kinda fun to have some tasty coconut surprises along the way. Give it a try and it will be a wonderful jumpstart to your day!

- ½ c. orange juice
- ½ c. greek coconut yogurt
- 1½ - 2 c. tropical fruit ( I used frozen strawberries, pineapple, and papaya)
- ¼ c. shredded coconut
- 3 T. honey
- 1 c. ice
- Combine all ingredients in blender. Pulse several times until smooth. Garnish with fruit. Store in refrigerator for 1-2 days.
