A fresh salad is always the healthy choice, however, in the warmer months of spring and summer it becomes my desirable choice. Something about the fresh, cool ingredients on a warm day hits the spot. I haven’t been to the Olive Garden Restaurant in years, but I remember loving the delicious house salad that comes family style to your table. I would always accidentally fill up on the salad before my meal would come. I could count on a to-go box for my main dish to enjoy the next day.
A few weeks ago I had several fresh ingredients in my fridge, as I was looking around at what to make, the Olive Garden salad popped into my mind. Voila…a delicious house salad of my own. It’s simple to make and pairs with nearly every meal. Hope you give it a try and enjoy it as much as we do.
Copycat Olive Garden Salad
Ingredients
- 1/2 head of iceberg lettuce washed and chopped
- 1 head romaine lettuce washed and chopped
- 3-4 mild pepperoncini
- 1 cup cherry tomatoes washed and sliced
- 1/4 red onion sliced thing
- 6-12 pitted black olives halved
- 1/2 -3/4 cup of croutons
- Italian Dressing of choice
- Freshly grated parmesan
- Fresh cracked pepper
Instructions
- In a large serving bowl combine lettuces, pepperoncini, cherry tomatoes, red onion, black peppers and croutons.
- Just before serving add Italian dressing of choice and toss to combine
- Top with fresh grated parmesan cheese and fresh ground pepper
