Thanksgiving is almost here! I look forward to catching up with family, and sharing what all we’re grateful for. I love seeing the cousins play together with so much excitement and energy. And I can imagine the savory aroma of the turkey wafting out of the oven. But just as much as I love the turkey, I think I just as much love the side dishes of Thanksgiving: the mashed potatoes, stuffing and delicious salads. But I think my favorite is this classic: corn casserole.
Corn casserole is a warm and savory side dish that has been loved by our family for many years. We always have it at Thanksgiving and a few other holidays, too. It is all the goodness of cornbread and creamed corn rolled into one scrumptious, comforting dish.
The ingredients are simple and inexpensive. It is super easy to make (as in, just stir everything together!), and can be made in advance and popped into the freezer.
- 1 can whole kernel corn
- 1 can cream corn
- 1 Jiffy Corn muffin mix
- 1 egg
- 1 C sour cream
- ½ C melted butter
- Preheat oven to 350 degrees.
- Mix all ingredients together and pour into lightly greased casserole.
- Bake 45 minutes to 1 hour.
Freezes well. Freeze before baking. When ready to use, thaw overnight in refrigerator, then bake.
