This Frito Corn Salad is another recipe of my Mom’s. She is a wonderful cook who isn’t afraid to try new recipes. Lucky for me, she tries them and passes along the keepers. This would be one of the keepers! Frito corn salad would be a delicious addition to any BBQ, picnic or potluck you are attending this summer. It is a unique blend of Chili Cheese Fritos, corn, cheddar cheese, mayo and a few other chopped ingredients, making this side dish addictively delicious. I have served this several times and each time there is barely a scoop left. I actually just served it at my daughter’s birthday party and was asked by several in attendance for the recipe. (Here it is ladies!)Not only is this side dish yummy, it’s easy and can be made ahead of time, just adding the Fritos before serving to keep them crunchy! Give it a try for Memoial Day or at your next summer potluck or BBQ; you will not be disappointed.
- (2) 15 oz cans whole kernel corn - drained
- (2) cup grated cheddar cheese
- (1) cup Mayonnaise
- (1) cup green pepper chopped
- (1/2) cup red onion, finely chopped
- (1) 10.5oz bag chili cheese Fritos - crushed
- Mix first 5 ingredients and chill
- Just before serving stir in crushed Fritos
