The holidays are quickly approaching! In the midst of keeping up with kiddos, the combine running and oodles of office work, the holiday season snuck up on me. Sure enough, just as the holidays sneak up so will all the meals while my kids are home on break. Does this happen to anyone else? You are busy hanging out or running errands and the next thing you know it is dinner time? This is the perfect time of year to throw together a salad, pull some soup out of the freezer or if you had your act together in the morning serve your crockpot meal. I try to have some food in the freezer on hand during the busy days of Thanksgiving and Christmas break, but there are times I do not get this accomplished. This is when I really enjoy a quick and simple recipe. This Cranberry Apple Pecan Salad does the trick. Please note that the title mentions both chicken and turkey. Both meats work perfectly and I already know what I am doing with my left over turkey come black Friday…this yummy dish!
A few other great tips for when you don’t have a leftover turkey in your fridge is to use chicken…equally as delicious. Almost weekly I chop up a bunch of chicken to have on hand for busy weekdays to make meal prep fast and simple. I either buy a rotisserie chicken and debone it or follow Annie’s recipe for Quick and Easy Shredded Chicken.

Cranberry Apple Pecan Chicken/Turkey Salad
Ingredients
- 2 cups cooked turkey or chicken diced
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/2 cup diced apple
- 3/4 cup of mayonnaise
- salt and pepper to taste
Instructions
- In a large bowl combine all ingredients and stir gently to combine.
- Serve plain, on bread or lettuce leaf
