Cranberry seems to be the fruit of the season right now. There are cranberry candles, soaps, lipstick, and nail polish colors as I browse through the store aisles. Then there are even cranberry wreaths, cranberry cake pops, and popcorn with cranberry Christmas garland (the later I did as a kid each year). I think it is such a festive, seasonal, winter fruit that is always timeless.
Cranberry Fluff Salad
I have never cared much for a fresh cranberry to eat. They look so pretty, but the taste is so tart and bitter to me. However, I am reminded that sometimes I occasionally do like some foods with cranberries. My Aunt Susie has always made a wonderfully delicious (and beautiful) Cranberry Orange Salad that she shares with us for Thanksgiving. I like dried cranberries, and I definitely like the smell of cranberry.
So, I stepped out on a limb and gave this red and white fluffy salad a try. It’s got some other great components like pineapple, Cool Whip, and marshmallows to mellow down some of the strong cranberry punch. The colors look so bright and vivid this time of year. This would make a beautiful and refreshing side for the upcoming holidays that are just around the corner. 🙂
- 2 c. raw cranberries, chopped
- ¾ c. sugar
- 1½ c. drained crushed pineapple
- 1 lb. miniature marshmallows
- 1 carton of Cool Whip
- Combined chopped cranberries, sugar, and pineapple, and let stand ½ hour ( I used food processor). Add marshmallows and Cool Whip.
- Refrigerate and allow to stand overnight for flavors to mix.
