My sweet sister-in-law, Debbie, came for a visit. We decided to enjoy a day of shopping in Des Moines. One thing on my list of “to dos” –Costco membership. Over the years I’ve visited the store with Annie but never bit the bullet and purchased a membership. We decided to stop as Debbie needed a few things of her own. She showed me around and pointed out a few of her favorite things to buy. Of course I listened and obeyed. 🙂 Many items went into the cart including a very economically priced rotisserie chicken. Debbie said she and my brother make a meal out of the it. Then maybe for chicken sandwiches, a casserole or a stew/soup. Well, that’s just what I did.
Of course the chicken tasted delicious. It was beautifully browned and all. I served it with a salad and baked potato. The next day I placed the rest, carcass and all in a big pot. It came with quite a few drippings, which made for a rich broth. Check out the recipe below for the full recipe. Let me just tell you, my $6 chicken turned into several very delicious meals. I love playing the economical card, don’t you?
Chicken Noodle Soup from purchased rotisserie chicken
Ingredients
- 1 Purchased rotisserie chicken
- 1-16 oz pkg noodles (your favorite)
- 1 can chicken broth or
- 1 T chicken bouillion
- 3 qt water
- 1/2 C finely chopped celery with leaves
- 1/2 C chopped carrots
- salt and pepper to taste
Instructions
- Place rotisserie chicken in a large dutch oven. Fill with water and cook on medium for a couple hours. ( I did notice that this particular chicken meat had some pink color next to the bone which needed to be cooked out.
- Scoop chicken out of broth and let cool. Once chicken is out, add the rest of the ingredients in the broth and cook for 20 minutes or until noodles are cooked through
- When chicken meat is cool enough to work with, remove from the bone, chop up the larger pieces and place back in the pot.
- Serve with artisan bread (bucket bread) and you'll smile. 🙂
