There are about a dozen recipes that take me back to my childhood and this is one of those. Near the end of summer when gardens were flourishing, my Grandma and Mom would always have a bowl (or in my mom’s case a large glass measuring cup) full of cucumbers and onions. They would rotate between this creamy mayo based recipe and a vinegar based recipe. They are both delicious, but of the two this creamy cucumber and onion was my favorite. Fresh and flavorful with a hint of dill (which is optional) seemed to hit the spot on those warm end of summer evenings.
Creamy Cucumber & Onions
Ingredients
- 4 small cucumbers or 2 large
- 1/2 onion white or Vidalia
- Dressing
- 3/4 cup mayo
- 1/4 cup sugar
- 2 Tbs vinegar
- salt and pepper to taste
- Top with sprinkled dill weed to taste
Instructions
- Thinly slice cucumber and onions. Combine in a bowl
- Mix dressing ingredients and whisk until smooth. Pour over cucumbers and onions and toss.
- Sprinkle with dill weed. Cover and refrigerate until ready to serve.
