I love anything with garlic. However, I don’t so much love the pungent breath afterwards, but it has to be worth it right? Garlic just gives everything a little extra kick! For me, it makes a recipe go from good to great! I don’t mind adding in a little extra garlic, but maybe the next day I’ll think differently on that idea.
Summer is now “officially” here according to our calendars. With the longest day of the entire year being June 21st, I hope you are delighting in the the longer days with more sunshine. I’m definitely not missing winter right now!
This is an easy and creamy, zesty, appetizer that I hope you can enjoy on a laid-back summer night. Perhaps you throw it together and enjoy after working out in the yard, or invite over some friends and watch the sun go down together. Whatever it may be, I think you will savor this simple summer dip.
Creamy Feta Dip
Ingredients
- 6 oz. feta cheese crumbled
- 4 oz. cream cheese softened
- 1/3 c. plain Greek yogurt
- 1/2 t. dill weed dried
- 3 cloves garlic minced
- kosher salt and black pepper to taste
- 1 Roma tomato diced
- 1 pinch of crushed red pepper
- Olive oil to drizzle
- Pita chips crackers, or bread slices
Instructions
- Combine the feta cheese, cream cheese, Greek yogurt, garlic, and dill in the bowl of a food processor. Taste and season with kosher slat and black pepper, as desired.
- When well-combined, scoop into a bowl, and top with tomato, and a pinch of red pepper, dill, and a drizzle of olive oil.
- Serve cold with pita chips, crackers, or bread to dip.
