I’m always looking for new things to try with chicken. This is a healthier baked version of fried chicken.
Crispy Chicken Bites

A crispy and healthy version of chicken fingers
Ingredients
- 1½ c. all-purpose flour
- 1 t. salt
- ¼ t. pepper
- 2 eggs, whisked
- 2 c. Panko bread crumbs
- 3 boneless skinless chicken breasts, cut into 1 inch strips
- 1 T. brown sugar
- ½ c. ketchup
- 2 T. mustard
Instructions
- FOR THE CHICKEN BITES:
- Preheat the oven to 450 degrees.
- Lightly grease a rimmed baking sheet with cooking spray.
- Ready 3 shallow bowls or pie pans for coating the chicken: In the first bowl, stir together the flour, 1 teaspoon of the salt, and the pepper. In the second bowl, pour the eggs. In the third bowl, spread out the Panko.
- Working with 1 piece at a time, dip the chicken into the flour, coating it completely and shaking off the excess; then into the egg, allowing the excess to drip off; and finally into the panko, again shaking off the excess.
- Lay the coated chicken pieces on the prepared baking sheet.
- Bake until crisp and golden brown, about 30 minutes.
- FOR THE DIPPING SAUCE:
- Meanwhile, make the dipping sauce. In a bowl, whisk together the brown sugar, ketchup, and mustard until mixed. Transfer to individual dipping bowls.
- Serve the chicken hot from the oven with the sauce.
