Who needs a quick and easy, yet super delicious crock pot dish? Who needs a meal that you can pop into the crock pot in the morning and ignore until super time? Who needs a recipe that is less than five ingredients but tastes good enough to serve to guests?
Enter Crock Pot Berry Chipotle Pork Loin! We’ve been enjoying this delicious dish lately not only because it is scrumptious, but also because it couldn’t be easier to prepare. I just mix three ingredients, (soy sauce, garlic, and berry jalapeno relish), pour that mix over a pork loin, and I’m done.
A trick that helps me pull a meal together quickly is using a special ingredient that combines both savory and sweet. I love this relish because it is a little bit spicy with the jalapenos and a little bit sweet with the berries. I bought this at Wal-Mart. I have also used peach/jalepeno jam as a substitute.
The house smells delightful all day as this simmers away. I feel peaceful knowing that supper is ready to go!
Crock Pot Berry Chipotle Pork Loin
Equipment
- slow cooker
Ingredients
- 1 2-4 pounds pork loin
- 1/2 C soy sauce
- 2 t garlic minced
- 1/4 C berry chipotle pork relish
Instructions
- Place pork loin in crock pot and turn on to low setting.
- Mix remaining three ingredients and pour over the pork.
- Cook on low for 6-8 hours or high for 4 hours. The internal temperature of the pork should be above 165° and the meat should be pull-apart tender when its finished.
- Slice, place on a platter, and pour some of the pan sauce over the loin to serve.
