Crockpots are so handy! I have to admit, I forget to put mine in use at times. Yet, I’m always glad I do when my day is busy and I don’t have much time to spend in the kitchen preparing a meal. I especially love to walk in the kitchen door and smell the aroma of meat, veggies and seasonings and I’ve barely lifted a finger. Yes, how I love that!
Today I tried something a little different. As a lot of you know, Mr. Farmer and I have beef cattle. So…..”What’s for Dinner?” You guessed it! He does the caring for and I do the cooking of. 🙂 Needless to say, our freezer most always has some beef in it. The hamburger and roasts are always the first and second to run out of. The steaks: rib eye, fillet, New York strip are next in line. I must say, the minute steaks are not quiiiiitttttteeee as popular. They’re good, but never at the top. Therefore, I’m always trying to find yummy recipes. I’ve found another one today. Hope you like it. 🙂
Crockpot Minute Steak
Ingredients
- 1.5/2 lbs minute or round steak (4 pieces)
- 1 can Campbell's French onion soup
- 1 can cream of chicken soup
- 1/2 onion sliced or thickly chopped
- 1 carrot cut into strips
- 1/3 stick celery, chopped or slivered
- 2 potatoes, microwaved and sliced
- 1/2 t salt
- 1/2 t heavy pepper
- 1/4 bell pepper, cut into strips
- 1 clove garlic, minced
- 1 C pre-shredded cabbage
Instructions
- In a mixing bowl, stir together the 2 cans of soup and the salt and pepper and garlic. Set aside. In the bottom of the crock pot, place the minute steaks, then layer the other ingredients. Finally, cover the ingredients with the soup mixture. I normally cook this recipe on low for 4-5 hours, but you can change it up according to your crockpot settings. Before serving, bake the 2 potatoes in the microwave, then slice them into individual bowls. Add the crockpot steak and gravy atop the sliced potatoes.

Potatoes on the bottom, then the steak, the veggies. Plenty off delicious gravy to cover everything. I pair this with some warm artisan bread and butter. Fresh fruit for dessert.
