Crunchy Kettle Corn

Do you have movie nights at your house? We do and we love looking forward to them. The kettle corn at the big theaters can’t be beat, or can it?  This popcorn recipe surprised me. It’s very quick and easy…… and really Really good.  It’s a  3 step process which takes a little while; however, you can make it ahead of time and store it in an airtight container. When you’re ready to pop in the movie, the popcorn just needs to be poured out into the popcorn bowl……then gobbled up. You’ll see. You won’t be disappointed. 🙂

While the microwave popcorn is popping, there is some syrup cooking on the stove top.

I use this very large bowl to stir up the syrup and popcorn before baking.  This helps a lot!
Oh Yum! It’s ready…..”Come On Gang………….it’s time!”

A quick bake of 30 minutes with one turn and you’re all set.

Crunchy Baked Kettle Corn

So easy and delicious is this kettle corn. Make it ahead of time and enjoy. Makes a big batch!
Ingredients
  • 1 stick butter
  • 1 C white sugar
  • ¼ C corn syrup
  • ½ t salt
  • ¼ t baking soda
  • ½ t vanilla
  • Approximately 4 quarts popped corn
Instructions
  1. In medium-sized saucepan, melt butter; stir in sugar, corn syrup and salt. Bring mixture to boiling, stirring constantly. Boil over medium heat without stirring for 5 minutes. Remove from heat; stir in baking soda and vanilla. In a very large bowl filled with popped corn, pour hot syrup over the corn, mixing very well. Turn popcorn onto a 1 large baking sheet or 2 smaller. Bake, uncovered in 300 degree oven for 30 minutes, stirring and turning the popcorn after 15 minutes. Remove from oven; and cool. Break into pieces. Serve immediately or store in airtight bag or container.

So….the movie we watched last was, “We Are Marshall”. We pulled it from our video library. If its really good, we don’t mind watching several times. How about you?
