This is one of my favorite salads to use with fresh cucumber. It’s cool creaminess combined with the zestiness of vinegar and red onion are an appetizing and subtle combination. And of course, I always always think of summer when there is ample supply of all of our garden favorites.
With grilling season upon us, this side salad is simple and delicious with just about anything. We actually had it with spaghetti the other night, just because it sounded so good. If you are looking for a healthy, refreshing salad to pair with hamburgers or brats, this may become your new favorite 🙂
Creamy Cucumber Salad
Ingredients
- 1/4 c. sour cream
- 2 T. vinegar
- 1 T. fresh dill or 1 1/2 t. dried
- 2 t. lemon juice
- 3 c. cucumber - peeled seeded and quartered
- 1/2 c. red onion chopped
- salt and pepper to taste
Instructions
- In a large bowl, whisk together the sour cream, vinegar, dill, and lemon juice. Season with sea salt and pepper to taste.
- Stir in the cucumbers and red onions.
