Deb’s “Just the Best Cookies”

Well……I finally tried them. A while back my dear sister-in-law, Debbie, sent me a cookie recipe. She exclaimed, “These are just the BEST cookies! You must try them.” Well, try them I did and my response to the world is a resounding, “YUM!!!” The nice thing about this recipe is that all the ingredients tend to be pantry staples…at least for me, anyway. I just love it when I have an urge to create something in my kitchen and all the ingredients show up in my pantry. I’m afraid it doesn’t always happen that way. 🙂

Quite a few ingredients, actually.
These cookie dough instructions use the typical mixing of ingredients. Nothing new.
Rolled, flattened with a wet fork and slid into a 325 degree oven (which needs some housekeeping. :))
This sifter is a little bigger than what I needed but it worked.
Baked 12-13 minutes. Cooled on newspapers and sprinkled with confectioner’s sugar. They look yummy.
And onto a plate they go.
I must say, they are delicious with a cup of tea. Absolutely delicious! And, no, I’m not going to tell you how many cookies were on that little plate to begin with.

Deb’s “Just the Best Cookies”

These easy and delicious coffee dunkin' cookies will be a keeper for me. They freeze well, too.
Prep Time 10 minutes

Ingredients

  • 1 C butter, softened
  • 1 C sugar
  • 1 C brown sugar
  • 2 eggs
  • 1 C salad oil
  • 1 C rolled oats
  • 1 C corn flakes, crushed
  • 1/2 C flaked coconut
  • 1 C chopped pecans
  • 3 1/2 C flour
  • 1 t soda
  • 1 t salt
  • 1 t vanilla
  • 1/2 C Powdered Sugar

Instructions

  • Preheat oven to 325 degrees
  • Cream butter and sugars until light and fluffy.
  • Add eggs and blend. Add salad oil, stirring until oil is well blended.
  • Add oats, cornflakes, coconut and nuts. Stir until mixed.
  • Add flour, soda, salt and vanilla; mix well.
  • Form into balls about the size of a walnut.
  • Place on an ungreased cookie sheet and flatten with a fork dipped in water.
  • Bake for 12-13 minutes. Allow to cool a few minutes before removing . Sprinkle with powdered sugar.
